Vegetable or peanut oil, for frying

Peel and rinse the potatoes and cut them into the thickest battens.
Rinse cut potatoes in a large bowl with lots of cold running water for 5 minutes.
Stage 1 - SIMMER
Put the potatoes in cold unsalted water and simmer them for 20 minutes until they just start to break apart all that broken surface. (The broken surface of chips will then absorb the oil which will make the crust beautifully golden.)
Because the soggy chips are difficult to dry out the water, so pop them in the freezer for about an hour.
Stage 2 - FRY LOW
Heated the oil to 130 degrees centigrade, fry the potatoes for 5 minutes.
Stage 3 - FRY HIGH
Turn the heat up to 180 degrees and drop chips back in the oil until golden brown.
Sprinkle the chips with sea salt. (This is where you can get creative!)
